  俗话说“百菜不如白菜”。大白菜是日照人冬季百吃不厌的暖心美食,而以大白菜为原料制作的日照名特酱菜京冬菜,是老一辈日照人记忆里鲜活的乡愁味道。

  In the old days, southerners used to call the northern famous brand products as “Beijing goods”, and Rizhao winter vegetables were therefore named “Jing“.They can be stored in the jars for about three years.And they can be used not only as side dishes, but also as condiments for fish and egg soup.In 2021, the craftsmanship of Jing winter vegetables was selected into the expanded list of representative projects of Shandong provincial intangible cultural heritage.

  旧时,江南客习惯将北方名牌商品称之“京货”,日照冬菜遂冠以“京”字。京冬菜装在坛中,可保存三年。既能作平日餐桌上的小菜,又可当鱼汤、蛋汤的佐料。2021年,京冬菜传统制作技艺入选山东省省级非物质文化遗产代表性项目名录扩展项目名录。

  Jing winter vegetables, as the only tribute of Rizhao County, started to be produced in Guangxu's Reigh in the Qing Dynasty.The local high-quality Chinese cabbages are the main raw materials, which are cut and dried in advance, and soy sauce and Shaoxing wine are used as the condiments. Jing winter vegetables are long and thin, fragrant and delicious, brown in color and unique in shape.The production of Jing winter vegetables gradually took shape at that time, and whenever bulk cargo arrived in Shanghai, people scrambled to buy them. And that’s when Jing winter vegetables started to enjoy a high reputation.

  日照的京冬菜制作技艺始于清光绪年间,是清代日照县唯一朝贡品。京冬菜主要原料为日照产优质大白菜心,切、晒、晾干备用,佐料主要是优质酱油和绍兴酒等。京冬菜条长细匀,色泽如棕,浓香宜人,味美可口,别具一格。冬菜生产渐成规模后,每当有大批量货运到上海,人们就争相抢购,从此京冬菜便出了名。

  Besides pickles, they are also good condiments in pan-broiling, stir-frying, steaming, stewing and boiling soup. The dishes made with Jing winter vegetables, such as steamed pork, stuffed buns, scrambled eggs, stir-fried snail slices and the like, have their own unique flavor.Despite of the supporting roles of Jing winter vegetables, they still highlight the deliciousness of the ingredients because of the combination.

  京冬菜不光可以作为酱菜食用,在煎、炒、蒸、炖、煲汤中都是不错的配菜佳品。京冬菜扣肉、京冬菜大包子、京冬菜炒鸡蛋、京冬菜爆炒螺片等京冬菜做出的菜肴都别有一番风味。京冬菜在菜中虽是配角,但因有其搭配才凸显出食材的美味。
